Nidhi's Journey

Frame 38

Get ready to meet someone who has a passion for food and health!

I graduated from Arizona State University with a food and nutrition entrepreneurship degree. I also hold a certification in plant-based nutrition from Cornell University. My true passion is coaching individuals to lead healthier lifestyles, which prompted me to further my knowledge in lifestyle coaching through Precision Nutrition & Wellcoaches.

My dedication to promoting health continues. I've had the privilege of having my nutritious culinary creations featured in the cookbook "Plant-Based Women Warriors" by Jane and Ann Esselystn. My success stories are published in the magazine "Forks Over Knives." I take pride in pioneering the plant-based Indian lifestyle.

Outside my professional pursuits, I'm a proud mother of two growing kids and a loving wife. My family and I call the Chicago area in the United States home. I hail from Uttar Pradesh (U.P.) and Rajasthan in India, and I moved to the U.S. in 2001 after marrying my high-school sweetheart.

My motivation for embarking on this journey stems from a desire to make a positive impact. Looking back, I wish I had possessed the knowledge I have now, as it might have enabled me to assist or save my father, who passed away in 2013 due to multiple health issues. My mission is to extend a helping hand to as many people as possible.

My husband also grappled with obesity and faced numerous diet failures throughout most of his life until six years ago when both of us transitioned to a Plant-Based lifestyle. Our introduction to this way of living came through our doctor/physician, Dr. Ashwani Garg, to whom we are immensely grateful. Given our family histories of various ailments, I am determined to alter the course for future generations, including yours, if possible.

I hope that the members of this community can mutually support one another. My husband and I were exposed to several diets, but after 15 days, we felt hunger and frustration, which eventually led us to a yo-yo pattern and binge eating.

Having personally experienced the struggles with my father and husband, I've observed that a significant number of Indians, as well as individuals who appreciate Indian food and culture, are adopting unhealthy lifestyles that can lead to conditions like obesity, diabetes, and heart diseases. These health issues are not exclusive to the U.S. but are becoming increasingly prevalent in countries like India, China, and elsewhere.

Whole food, plant-based no-oil diet, combined with regular exercise, has the potential to reverse and prevent various diseases. It's the most sustainable way to live a vibrant life. This approach doesn't involve deprivation; instead, it allows individuals to savor their meals and establish a positive relationship with food.
